Ingredients
- 1 tsp coconut oil
- 10 eggs
- 1 cup mushrooms chopped
- 2 cups spinach
- 1/2 cup chorizo chopped
- 60g goat cheese
- 1/2 bunch continental parsley
- salt & pepper
- Optional: cooked brown rice
Directions
- Preheat oil in a large pan over high heat
- Add mushrooms & salt & pepper & saute until browned
- In a large bowl add eggs & whisk until combined
- Add spinach, chorizo, parsley, brown rice, salt & pepper
- Pour mixture into pan & turn down heat to a medium level
- Top with goats cheese
- Cook until the sides are cooked & come away from the pan
- Place under griller until cooked through
