  • 1 tsp coconut oil
  • 10 eggs
  • 1 cup mushrooms chopped
  • 2 cups spinach
  • 1/2 cup chorizo chopped
  • 60g goat cheese
  • 1/2 bunch continental parsley
  • salt & pepper
  • Optional: cooked brown rice

Directions

  1. Preheat oil in a large pan over high heat
  2. Add mushrooms & salt & pepper & saute until browned
  3. In a large bowl add eggs & whisk until combined
  4. Add spinach, chorizo, parsley, brown rice, salt & pepper
  5. Pour mixture into pan & turn down heat to a medium level
  6. Top with goats cheese
  7. Cook until the sides are cooked & come away from the pan
  8. Place under griller until cooked through
