- 2 eggs
- 2 slices of bread (I use Gluten Free but feel free to use whatever you like)
- 1/2 an avocado
- chilli flakes
- salt & pepper
- olive oil
- micro herbs*
- Cook poached eggs
- Toast your bread
- Spread toast with avocado, sprinkle some chilli flakes on top & a squeeze of lemon or lime.
- Add poached eggs & season with salt & pepper
- Top with micro herbs & a drizzle of olive oil
*You can usually buy micro herbs from any good supermarket. If not, a fruit and vegetable market should sell them. You can buy mixes or specific micro herbs like broccoli sports, pea sprouts etc
