Ingredientspoached eggs and avo

  • 2 eggs
  • 2 slices of bread (I use Gluten Free but feel free to use whatever you like)
  • 1/2 an avocado
  • chilli flakes
  • lemon
  • salt & pepper
  • olive oil
  • micro herbs*

Directions

  1. Cook poached eggs
  2. Toast your bread
  3. Spread toast with avocado, sprinkle some chilli flakes on top & a squeeze of lemon or lime.
  4. Add poached eggs & season with salt & pepper
  5. Top with micro herbs & a drizzle of olive oil

*You can usually buy micro herbs from any good supermarket. If not, a fruit and vegetable market should sell them. You can buy mixes or specific micro herbs like broccoli sports, pea sprouts etc
