Ingredientstofu scramble

  • 1 tsp coconut oil
  • 200g tofu
  • 1 cup mushrooms chopped
  • 2 cups spinach
  • 1 capsicum chopped
  • 1 tsp of turmeric
  • 1 tsp paprika
  • 1 tsp cumin
  • salt & pepper

Directions

  1. Preheat oil in a large pan over high heat
  2. Add tofu to the pan & mush using a wooden spoon
  3. Add salt, pepper, turmeric, paprika & cumin. Sauté until tofu browns
  4. Add mushrooms, spinach & capsicum. Sauté until soft
  5. Remove from pan & enjoy
