Ingredientspotato hash

  • 1 tbsp coconut oil
  • 1 potato grated
  • 1-2 cups vegetables
  • 1 egg
  • handful grated cheese (we used pecorino)
  • salt & pepper


  1. Preheat grill in the oven
  2. Heat oil in a pan over high heat
  3. Add vegetables and season with salt and pepper
  4. Saute until just cooked through. Remove from pan
  5. Add grated potato to the pan and season with salt and pepper
  6. Saute for a couple of minutes and then scrape into the middle of the pan so it forms a a flat hash
  7. Top with the cheese, vegetables and crack egg on top
  8. Let cook for approx 5 mins until the underneath is crispy
  9. Place pan under the grill and cook until egg is cooked through
  10. Enjoy for breakfast, lunch or dinner!

Vegan option: don’t add egg and omit cheese
