Makes 6 fritters
Ingredients
- 2 zucchinis
- 3 eggs
- 1/4 cup gluten free flour
- 1-2 tbsp goat cheese
- small handful continental parsley, chopped
- small handful mint, chopped
- 1 tsp dill, chopped
- salt & pepper
- coconut oil for frying
Directions
- Grate the zucchini and squeeze out any excess water
- In a bowl whisk eggs & flour until combined
- Add all ingredients and mix until combined
- Heat coconut oil in a pan over medium- high heat
- Add 3 large spoonfuls of the mixture to the pan and press down to they are flat
- Cook on each side for approx 3 mins or until browned
- Add more oil to the pan and cook the other 3
- Serve with smoked salmon, goat cheese, herbs & olive oil
