Makes 6 fritters

Ingredientszucchini fritter

  • 2 zucchinis
  • 3 eggs
  • 1/4 cup gluten free flour
  • 1-2 tbsp goat cheese
  • small handful continental parsley, chopped
  • small handful mint, chopped
  • 1 tsp dill, chopped
  • salt & pepper
  • coconut oil for frying

Directions

  1. Grate the zucchini and squeeze out any excess water
  2. In a bowl whisk eggs & flour until combined
  3. Add all ingredients and mix until combined
  4. Heat coconut oil in a pan over medium- high heat
  5. Add 3 large spoonfuls of the mixture to the pan and press down to they are flat
  6. Cook on each side for approx 3 mins or until browned
  7. Add more oil to the pan and cook the other 3
  8. Serve with smoked salmon, goat cheese, herbs & olive oil
