IngredientsΒ beetroot hummus

  • 2 beetroots chopped
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 can chickpeas
  • 2 tbsp tahini
  • 3 tbsp olive oil
  • juice of 1 lemon
  • 1 tsp cumin
  • dash paprika
  • salt & pepper

Directions

  1. Preheat oven to 180 deg
  2. In a bowl add beetroot, balsamic, honey, salt & pepper
  3. Mix until beetroot is coated & place on lined baking tray & into oven
  4. Cook for approx 20-30min. Remove & let cool
  5. In a blender, add all ingredients & blend until combined
