Ingredientsfried-rice

  • 1/2 a cauliflower
  • 1 brown onion, chopped
  • 1 tsp coconut oil
  • 1 bunch of broccoli, chopped
  • 2 carrots, chopped
  • 1 zucchini, chopped
  • 3 eggs, whisked together
  • 4 rashers of bacon
  • 1 capsicum, chopped
  • 2 tbsp soy sauce
  • 1 tbsp sweet chilli sauce
  • 2 tbsp sesame oil
  • 1 tsp chilli flakes

Directions

  1. Chop the cauliflower into fine pieces and set aside
  2. Preheat a large pan, over high heat and add coconut oil, onion, salt & pepper
  3. Sauté until browned
  4. Add cauliflower & season generously with pepper and a little salt
  5. Sauté for a few minutes, until cauliflower has softened slightly
  6. Add all vegetables, soy sauce, sweet chilli sauce, sesame oil & chilli flakes. Stir through
  7. Put lid on and turn heat down to medium
  8. While that is cooking, in another pan add bacon and cook until crispy
  9. Remove bacon and add egg.
  10. Let eggs cook on one side and then flip like an omelette. Remove and set aside
  11. Chop bacon and egg into small pieces and add to friend rice
  12. Ready to serve!
