Ingredientschicken pesto pasta

  • 1 packet mung bean pasta
  • 1 tbsp coconut oil
  • 500g chicken
  • salt & pepper
  • 2 cups spinach
  • 1/4 cup pine nuts
  • 1 cup homemade basil pesto

Directions

  1. Cook pasta as per directions
  2. Heat coconut oil in a pan over high heat
  3. Add chicken & season with salt & pepper. Cook until golden brown
  4. In a bowl, add cooked pasta, chicken, pine nuts, spinach & pesto. Mix & serve
