Ingredientsfried rice

  • Cooked brown rice
  • Cooked roasted sweet potato*
  • Vegetables (I used broccoli, carrots, spinach & scallions)
  • Soy sauce
  • Szechwan sauce (or just use Chili Sauce)
  • Eggs
  • Coconut oil**

Directions

  1. In a pan, heat some coconut oil over high heat
  2. Add the salmon and brown on all sides
  3. Flake the salmon with a fork and cook until crispy. Remove from pan
  4. In a pot, heat some coconut oil over medium- high heat
  5. Add cooked brown rice, sweet potato, vegetables, soy sauce, szechwan sauce and salt & pepper
  6. Mix until everything is coated in sauce. Add sauce to your tasting
  7. Turn heat down to medium to low
  8. In a pan, heat some coconut oil over high heat
  9. Add eggs and salt & pepper and stir with a fork, scrambling the eggs
  10. Add the salmon and eggs to the pot and stir
  11. ENJOY

*  If you have none, you can quickly cook one by poking a few holes in it and cooking in the microwave for approx 5 minutes (depending on the size of potato). Cook until soft & then chop into cubes.

** You can use any oil but coconut oil is best to cook with.
