IngredientsΒ healthy fried chicken

  • 400g chicken tenderloins
  • 2 eggs
  • 2 cups almond meal (approx)
  • 1 cup coconut oil (approx)
  • salt & pepper

Directions

  1. In a bowl, add eggs and whisk
  2. In another bowl, add almond meal
  3. Coat chicken pieces in egg mixture & then almond meal
  4. Heat coconut oil (approx 5mm deep) in a large pan over high heat
  5. Add a few chicken pieces, season with salt & pepper & cook until golden
  6. Flip chicken over & cook until chicken is just cooked through
  7. Remove pieces & add more chicken, repeating step 5 & 6
