- 400g chicken tenderloins
- 2 eggs
- 2 cups almond meal (approx)
- 1 cup coconut oil (approx)
- salt & pepper
Directions
- In a bowl, add eggs and whisk
- In another bowl, add almond meal
- Coat chicken pieces in egg mixture & then almond meal
- Heat coconut oil (approx 5mm deep) in a large pan over high heat
- Add a few chicken pieces, season with salt & pepper & cook until golden
- Flip chicken over & cook until chicken is just cooked through
- Remove pieces & add more chicken, repeating step 5 & 6
