Ingredients

  • 1 tbsp olive oil
  • 1 onion chopped
  • 1/2 clove garlic
  • 2 cans chopped tomatoes
  • 1 zucchini
  • 2 carrots
  • 1 can kidney beans
  • 1 can corn kernels
  • 2 cups broccolini
  • 1 capsicum chopped
  • 1/2 cup basil leaves
  • 1/2 teaspoon salt
  • 1 teaspoon italian herbs
  • You can add meat or tofu if you wish

Directions

  1. Heat oil, onion and garlic in a pan until onion is golden brown.
  2. Add all ingredients and mix well.
  3. Leave to simmer on medium heat for 20-30 minutes.
