Ingredientsroasted sweet potato

  • 1-2 sweet potatoes
  • 2 tbsp coconut oil
  • salt & pepper


  1. Preheat over to 200 degrees
  2. Chop the sweet potato into small cubes and spread on a lined baking tray
  3. Melt the coconut oil (if it is hard) and drizzle over sweet potato & season with salt & pepper
  4. Using a spatular, move the sweet potato around so all pieces are coated in the oil
  5. Cook for approx 20-30 mins or until golden brown
  6. Every 10 minutes, use the spatular to turn the sweet potato
