Ingredientschicken curry

  • coconut oil
  • 500g chicken breast diced
  • 4 tbsp red thai curry paste
  • 1 can coconut cream
  • 1 cups peeled and diced potato & sweet potato
  • 1/2 cup green beans chopped
  • 1 cups pineapple chopped & diced

Directions

  1. Boil potatoes in a pot until slightly soft
  2. Heat coconut oil in a large pot over medium heat
  3. Add chicken pieces and cook until just cooked through
  4. Add curry paste, coconut cream, potatoes, green beans & pineapple
  5. Cook until heated through
  6. Enjoy with rice
