Veggie BakeIngredients

  • 1 eggplant, sliced
  • 10 brussel sprouts, chopped
  • 3 broccolini, chopped
  • 1 cup mushrooms, chopped
  • 2 cans chopped tomatoes
  • 1/2 cup pumpkin seeds
  • 5 eggs
  • Goats cheese
  • Saganaki cheese (or grated cheese)
  • 1/2 bunch continental parsley, chopped
  • 1 tsp of each: paprika, cumin, ginger, coriander & turmeric
  • Salt & pepper

Directions

  1. Preheat oven to 170 deg
  2. In a large tray, add chopped vegetables
  3. Sprinkle spices, salt & pepper over vegetables
  4. Pour canned tomatoes over the top & sprinkle with parsley, pumpkin seeds & goats cheese
  5. Crack the eggs on the veggie bake & grate Saganaki cheese over the top
  6. Place in oven for 45min-1hr, or until cheese has browned & veggies have cooked

* You can use whatever vegetables you want!
