Ingredients5 minute meal

  • 2 eggs
  • 1 tsp coconut oil
  • rocket
  • micro herbs (or any kind of greenery you want)
  • cherry tomatoes chopped
  • capsicum chopped
  • goats cheese
  • olive oil (I used wasabi infused olive oil to give some extra flavour)


  1. Pan fry the eggs in the coconut oil over high heat
  2. place all other ingredients in a bowl and top with eggs and oil
