  • cooked buckwheat or quinoa
  • rocket & spinach
  • grated carrot
  • broccolini
  • sunflower seeds
  • pumpkin seeds
  • almonds
  • cinnamon
  • coconut oil
  • salt & pepper
  • traditional parsley
  • mint
  • olive oil
  • eggs

Directions

  1. in a hot pan heat coconut oil
  2. add broccolini, almonds, pumpkin seeds & cinnamon and season with salt & pepper
  3. cook for a few minutes until almonds & pumpkin seeds are browned and broccolini is softened slightly
  4. remove from heat and chop broccolini
  5. add all ingredients to a large salad bowl
  6. poach eggs
  7. drizzle with olive oil and serve
