- cooked buckwheat or quinoa
- chopped kale
- chopped almonds
- juice of 1 lemon
- 1/4 cup olive oil
- 1/8 cup apple cider vinegar
- In a large bowl, combine buckwheat or quinoa with kale, almonds & pomegranate seeds
- Squeeze lemon over salad and toss
- Combine olive oil & apple cider vinegar and pour over salad
We enjoyed ours with eggs and some Pats Veg fermented veggies!
