Ingredients

  • chopped tomatoes
  • chopped cucumber
  • chopped corn
  • chopped capsicum
  • 1 onion
  • oil
  • 500g mince
  • 1/2 can refried beans
  • 1 can kidney beans
  • Β can chopped tomatoes
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp turmeric
  • salt & pepper
  • 1 avocado
  • squeeze of 1/2 lemon

Directions

  1. Preheat a pan over high heat and add oil and onion
  2. After a few minutes, add mince and cook until just browned
  3. Add paprika, cumin, coriander, turmeric, salt & pepper and stir through
  4. Add can of tomoatoes, kidney beans and 1/2 can refriend beans
  5. Stir until mixed through
  6. Let simmer for approx 10-20 minutes
  7. Add mince and guacamole to chopped veggies
  8. To make guacamole: mash avocado with squeeze of lemon and a pinch of salt & pepper
