Ingredients

  • 1 grated carrot
  • 1 cup chopped pumpkin (with skin on)
  • 1/2 avocado
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1 can of tuna in oil
  • 1/2 tin baby beetroot sliced
  • 1/4 cup broad beans
  • 1/4 cup lentils

Directions

  1. Lay the chopped pumpkin on a microwave safe plate and put in the microwave for approx. 4 minutes or until pumpkin softens.
  2. Mix all ingredients together and drizzle with balsamic vinegar.
