Ingredientssauteed roast vegetables

  • 1 Beetroot chopped *
  • 1 Sweet Potato chopped *
  • 1 cup chopped kale
  • 1 cup green beans chopped
  • pumpkin seeds
  • 1 tsp chilli flakes
  • 1 tbsp coconut oil
  • 1 tsp cinnamon
  • 2 poached eggs

Directions

  1. Heat the coconut oil in a pan, over high heat
  2. Add all ingredients and saute until the kale softens and the veggies brown
  3. Top with poached eggs

* I used some left over roasted beetroot & sweet potato but you can use it uncooked and just cook it a little longer in the pan!
