  • BASE
  • 1 1/2 cup gluten free flour
  • 1/4 cup coconut oil
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • 1/2 cup desiccated coconut
  • 2 eggs
  • 1/4 cup brown rice malt syrup
  • CARAMEL
  • 2 cups pitted dates (soaked in boiling water for 10 minutes, then drained)
  • 2 tbsp peanut butter
  • 1/4 cup water
  • CHOCOLATE
  • 4 tbsp cacao
  • 4 tbsp coconut oil
  • 2 tbsp brown rice malt syrup

Directions

  1. BASE:Β Preheat oven to 180 deg celcius
  2. Mix all dry ingredients in a bowl
  3. In a separate bowl, mix all wet ingredients & add to dry ingredients
  4. Whisk all ingredients together until a thick mixture is formed
  5. On a lined baking tray, make small cookies & flatten
  6. Bake for approx 15-20 mins or until golden brown
  7. CARAMEL: Mix all ingredients in a high powered blender until smooth
  8. Spoon onto each biscuit & put in freezer
  9. CHOCOLATE:Β In a small pot, melt coconut oil over low heat & add cacao & rice malt syrup
  10. Drizzle over the cookies and put into freezer until chocolate has hardened
