Ingredientsapple crumble

  • 4 apples, cored and chopped
  • 1.5 cups water
  • 2 tsp vanilla essence
  • juice of 1 lemon
  • 1.5 cups oats (or rice flakes if gluten free)
  • 1 cup desiccated coconut
  • 1 cup macadamias
  • 4 tbsp coconut oil
  • 4 tbsp rice malt syrup
  • 2 tsp cinnamon

Directions

  1. Preheat oven to 160 deg
  2. Place apple, water, 1 tsp vanilla, lemon juice & 1 tsp cinnamon in a medium pot
  3. Cook over low heat for approx 30 mins or until apples have softened and water has decreased
  4. In a food processor add oats, coconut, macadamias, coconut oil, rice malt syrup, 1 tsp vanilla essence & 1 tsp cinnamon and process until mixed
  5. Place apple mixture into a baking dish* and top with the oat mixture
  6. Bake in the oven for approx 20 minutes or until golden brown
  7. Serve with banana ice cream or coconut cream

*If there’s still some water left, scoop the soft apples out and leave the water in the pan.
