  • 3 ripe bananas mashed
  • 1 egg
  • 1 tsp vanilla essence
  • 2 tbsp. coconutΒ oil
  • 1/2 cup rice malt syrup
  • 4 tsp baking powder
  • 1 tsp cinnamon
  • 3/4 cup almond milk
  • 1 cup almond meal
  • 1.5 cup gluten free flour
  • 1 cup coconut flour
  • pinch of salt

Directions

  1. Preheat oven to 175 deg and line a loaf tin/pan with baking paper
  2. In a large bowl, add mashed banana, egg, vanilla, coconut oil, rice malt syrup & almond milk. Mix until combined
  3. Add all flours, baking powder, cinnamon & salt. Mix until combined & pour in loaf tin *
  4. Cook for approx. 1 hour or until just cooked through
  5. Let cool before cutting

* you can top with a banana cut length ways or with pumpkin seeds, chopped almonds & coconut
