Ingredients
- 1 cup almond meal
- 1/2 cup cacao
- 1 tsp baking powder
- 1/2 cup maple syrup
- 1/2 cup coconut oil
- 1/2 cup boiling water
- 1 tsp vanilla
- 3 eggs (separated)
- 1/2 cup walnuts
Directions
- preheat oven to 170 deg and grease a cake tin with coconut oil
- in a large bowl, combine dry ingredients
- add maple syrup, coconut oil, water, vanilla & egg yolks and mix until combined
- add walnuts and stir through
- in a small bowl beat egg whites until peaks form
- fold egg whites into the mixture, until combined
- pour into cake tin and bake for approx 20 mins or until just cooked on the outside
- let cool on wire rack
