Ingredients

  • 1 cup almond meal
  • 1 cup oat flour (or gluten free flour)
  • 1/2 cup gluten free flour
  • 1/2 cup desiccated coconut
  • 1/3 cup maple syrup
  • 2 eggs
  • 1/2 cup coconut oil
  • 1 tsp vanilla
  • 1 tsp baking powder
  • sugar free strawberry jam

Directions

  1. preheat oven to 150 deg and line a baking tray with baking paper
  2. mix dry ingredients in a large bowl
  3. mix wet ingredients in a small bowl until combined
  4. add wet ingredients to dry ingredients and combine
  5. spoon mixture onto baking tray into cookie sizes and press a thumb print into each cookie
  6. spoon a tsp of jam into each cookie and bake for approx 10 mins or until golden brown
