Ingredients
- 1 cup almond meal
- 1 cup oat flour (or gluten free flour)
- 1/2 cup gluten free flour
- 1/2 cup desiccated coconut
- 1/3 cup maple syrup
- 2 eggs
- 1/2 cup coconut oil
- 1 tsp vanilla
- 1 tsp baking powder
- sugar free strawberry jam
Directions
- preheat oven to 150 deg and line a baking tray with baking paper
- mix dry ingredients in a large bowl
- mix wet ingredients in a small bowl until combined
- add wet ingredients to dry ingredients and combine
- spoon mixture onto baking tray into cookie sizes and press a thumb print into each cookie
- spoon a tsp of jam into each cookie and bake for approx 10 mins or until golden brown
