Ingredientsmuesli bars

  • 2.5 cups oats*
  • 1.5 cup coconut
  • 3/4 cup rice flour
  • 1/2 cup pepitas
  • 1/2 cup sunflower seeds
  • pinch of salt
  • 3 eggs
  • 1 tsp vanilla essence
  • 3/4 cup peanut butter (or any nut butter you prefer)
  • 3/4 cup coconut oil
  • 3/4 cup rice malt syrup
  • 1 tsp natvia (don’t have to include if don’t want to)
  • Cacao nibs (don’t have to include if don’t want to)


  1. Preheat oven to 175 deg
  2. In a large bowl, mix the dry ingredients
  3. In a small bowl, whisk the wet ingredients
  4. Pour the wet ingredients into the dry ingredients and stir until mixed
  5. Pour mixture in a lined baking tray and sprinkle with cacao nibs
  6. Bake for approx 30 mins or until top in golden and it is cooked through
  7. When cooled, cut into slices

*To make gluten free, you can use quinoa flakes or more rice flour.
