Ingredientspeanut butter balls

  • 1 cup dates
  • 1 tbsp organic peanut butter
  • 2 tbsp coconut oil melted
  • 2 cups almond meal
  • 1 cup desiccated coconut
  • 3 tbsp cacao
  • 3 tbsp coconut oil
  • 3 tbsp rice malt syrup (or any sweetener: honey, agave syrup etc)
  • extra desiccated coconut for rolling


  1. In a high powered blender, mix dates, peanut butter, coconut oil & pinch of salt until smooth*
  2. Transfer to a bowl
  3. Place all other ingredients in blender & blend until mixed
  4. Transfer to a bowl
  5. Roll the chocolate mixture into balls and press a hole with you thumb into one side
  6. Place a tsp of the caramel mixture into the hole and wrap the chocolate mixture around the caramel**
  7. Place in freezer for at least an hour
  8. Thaw for a few minutes before eating

* If the mixture isn’t blending, you may need to add some water

** You may need to add more chocolate mixture around the caramel to cover it
